Creamy Poblano Pasta with a Bold Roasted Kick
Ingredients:
- Spaghetti
- Salt, to taste
- Cream cheese
- Roasted poblano pepper, cleaned, peeled, and seeded
- Cilantro
- Chicken seasoning
- Onion
- Garlic
- Milk
- Cream
- Queso fresco and cilantro, for serving
Preparation:
- Cook the pasta according to the package instructions. Once ready, drain and set aside.
- In a blender, add the cream cheese, roasted and cleaned poblano pepper, cilantro, chicken seasoning, onion, garlic, milk, and cream.
- Blend until smooth and creamy.
- In a wide-bottom pan, add the butter and let it melt. Add the cooked pasta.
- Mix until the butter is evenly distributed throughout the pasta.
- Add the poblano pepper sauce and mix well.
- Let it cook for 4 minutes.
- Serve with queso fresco and chopped cilantro.
