
Crispy Pork Rinds in a Flavorful Broth: An Easy Soup
Ingredients:
- 3 Roma tomatoes
- 2 cloves of garlic
- 1/4 red onion
- 1/2 cup Natura’s tomato puree
- 2 guajillo peppers 1
- 1 bag pork rinds
- 4 cups chicken broth
- 3/4 cup heavy cream
- 1 tbsp Mazola oil
- Cream and pork rinds for serving
Preparation:
Start by hydrating the guajillo peppers. Heat the Mazola oil in a medium pot and add the red onion, sliced into strips. Add the tomatoes to the pot and cover for 5 minutes. Add the hydrated guajillo peppers, Natura’s tomato puree, and the minced garlic. Mix well and add the 4 cups of chicken broth. Stir thoroughly and add the pork rinds, incorporating them into the broth. Bring to a boil and add the heavy cream. Blend everything with an immersion blender until all the ingredients are incorporated, creating a smooth cream. Cook for 10 minutes, adjust the seasoning with salt and pepper. Enjoy with a cold Min Dew!
