
Authentic Salvadoran Pastelitos Recipe with Mama Lycha’s
Ingredients:
PICADILLO
- 1 lbs Ground Beef
- 1/2 cup Minced White Onion
- 3 Minced Garlic Cloves
- 1/2 Minced Bell Pepper
- 1 Carrot -small squares-
- 2 Potatoes cut in small squares
- Salt – as desired
- Pepper – as desired
- 2 Tbsp Annatto Seasoning (Achiote)
- 2 Tbsp Chicken Boullion
CORN DOUGH:
- 2 Cups or Corn Dough
- 1 tbsp Melted Butter
- 2-3 Cups Water
- 1/4 Tsp Salt
- 2 Tbsp Chicken Bullion
- 3 Tbsp Annatto Seasoning (Achiote)
- 1 Tsp Baking Powder
Preparation:
PICADILLO:
Make a stir fry with onions, garlic and ground beef, then add first carrots, and a couple of minutes later add potatoes,stir fry until vegetables soften and all is cooked evenly.
CORN DOUGH:
Season with achiote and chicken boullion, finish it with salt and pepper to taste.
In a Bowl add the corn flour and seasonings, knead all very well adding the water slowly until your consistency of the dough doesn’t stick to your hands and it’s manageable to form let it sit for about 10 mins covered and begin to form your pastelitos.
FINALLY:
Fry the Pastelitos until golden brown. Serve then with Mamá Lycha Curtido and salsa!
