
A Fiesta in Every Bite: Mexican Macaroni Salad
Ingredients:
- 1 Can Sweet Corn (15 oz)
- 1/2 Red Onion (sliced)
- 2 Celery Sticks, finely chopped
- 3/4 shredded Carrots
- 2 serrano peppers (deseeded and finely chopped)
- 1/2 chopped ham
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 Cup Mayonnaise
- 1/2 Cup Sour Cream
- 2 Tbsp Yellow Mustard
- Pickled Jalapeño Juice (to taste)
- 8 ounces Elbow Macaroni Pasta
- DUCALES CRACKERS
Preparation:
- Cook Elbow Macaroni Pasta according to package directions. Drain and rinse well under cold water to remove excess starch.
- In a large bowl, combine the sliced red onion, celery, shredded carrots, deseeded and finely chopped serrano peppers, and chopped ham. Mix well.
- Add the mayonnaise, sour cream, yellow mustard, and pickled jalapeño juice (to taste). Mix well to combine.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve it with DUCALES CRACKERS, Enjoy it!
