MEXICAN STYLE MACARONI SALAD

A Fiesta in Every Bite: Mexican Macaroni Salad

Ingredients:

  • 1 Can Sweet Corn (15 oz) 
  • 1/2 Red Onion (sliced) 
  • 2 Celery Sticks, finely chopped
  • 3/4 shredded Carrots
  • 2 serrano peppers (deseeded and finely chopped) 
  • 1/2 chopped ham
  • 1/2 tsp salt 
  • 1/4 tsp ground black pepper
  • 1/4 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 2 Tbsp Yellow Mustard
  • Pickled Jalapeño Juice (to taste) 
  • 8 ounces Elbow Macaroni Pasta
  • DUCALES CRACKERS

Preparation:

  1. Cook Elbow Macaroni Pastaccording to package directions. Drain and rinse well under cold water to remove excess starch.
  2. In a large bowl, combine the sliced red onion, celery, shredded carrots, deseeded and finely chopped serrano peppers, and chopped ham. Mix well.
  3. Add the mayonnaise, sour cream, yellow mustard, and pickled jalapeño juice (to taste). Mix well to combine.
  4. Taste and adjust seasoning with salt and pepper as needed.
  5.  Serve it with DUCALES CRACKERS, Enjoy it!
