SPINACH SALAD

Try this unique salad with a crunchy, tasty kick!

Ingredients:

  • 4 to 5 cups of spinach

  • 3 corn tortillas for the strips

  • 1 avocado, cubed or sliced

  • Cubed panela cheese

    Chilies vinaigrette:

  • 2 pasilla peppers or 1 ancho chile soaked in water

  • 1 guajillo pepper soaked in water
    Juice and zest of 1/2 yellow lemon

  • 4 tbsp orange juice

  • Zest of half an orange

  • 1 tsp dijon mustard

  • 1 tsp balsamic vinegar

  • 1/2 tsp honey

  • 2 tbsp olive oil

  • Salt and pepper

Directions:

1. Cut the tortilla into strips as thin as possible and bake them in your air fryer at 400 degrees for 5 min. Set aside.
2. Prepare the vinaigrette: Soak the chilies in water to soften, strain them, remove the seeds, cut them into strips and blend them with the rest of the vinaigrette ingredients. Test and adjust seasoning. The vinaigrette should not be spicy.

3. Cut the cheese into cubes and mix the cheese with 1 to 2 tbsp of vinaigrette
4. To serve, mix the spinach with the vinaigrette on a plate, arrange the cheese, avocado and tortilla strips on top.
Serve with more vinaigrette on the side.
