Golden Potato & Tuna Cakes – Crispy on the Outside, Tender on the Inside
Ingredients:
- 1/2 bunch curly parsley
- 3 medium potatoes, boiled and peeled
- 1 tablespoon butter
- 1 can tuna, drained
- 1/4 cup Gouda cheese
- 1 teaspoon paprika
- Salt to taste
- 1 teaspoon black pepper
- 1 egg
- Oil for frying
- 1/2 cup flour
Preparation:
Boil the potatoes and remove the skin. Add one tablespoon of butter and mix until well combined. Add the drained tuna, chopped parsley, Gouda cheese, paprika, salt, pepper, and the egg. Mix everything thoroughly and shape the mixture into patties.
Coat the patties in flour and fry them evenly in enough hot oil until golden. Serve with a honey mustard dressing if desired.
