Creamy Potato Soup

2 tablespoons vegetable oil
1 medium onion, chopped
1½ pounds (2 large) potatoes, peeled and cut into ¼ inch cubes
3½ cups water
4 vegetable flavored bouillon cubes (Maggi)
2 tablespoons all-purpose flour, dissolved in ¼ cup water
1 (7.6 ounce) can cream (Nestlé Media Crema)
Cotija cheese, crumbled (optional)
Cilantro, chopped (optional)


Heat oil in large saucepan over medium heat. Add chopped onion; cook, stirring occasionally, for 1-2 minutes or until tender. Add potatoes, water and bouillon cubes, and bring to a boil, making sure bouillon cubes are dissolved. Cook over medium heat for 15 minutes or until potatoes are tender. Stir dissolved flour into
saucepan; continue cooking for 2 minutes or until soup thickens to desired consistency. Stir in cream. Bring to a boil, stirring occasionally. Ladle into individual soup bowls and top each serving with cheese and cilantro.
