Fiesta Refrigerated Refried Mayacoba and Pinto Beans

Enedelia and Francisco Gonzalez have been making refrigerated refried beans since 1993 in Cabo San Lucas, Baja California. The Gonzalez's started by making beans in their kitchen and selling them to neighbors and to some small stores in their neighborhood. Today, they cook and package beans in an updated kitchen where they prepare them with the same traditional recipe and processes. Their beans are sold in small stores as well as big supermarkets like Wal-Mart, Costco and Soriana.

Local residents and tourists enjoy their beans because they are easy to serve, and they taste like homemade. It is very convenient to both residents and tourists to buy a product that saves them time in the kitchen in terms of preparation and cleaning. The Gonzalez's have hundreds of repeat sales from tourists who visit Cabo San Lucas regularly. With locals in the community, this product has become a popular household name. Enedelia brand beans are the most popular in that area, although several other brands are available.

This same recipe is now available at Fiesta Mart, the first supermarket to offer refrigerated refried beans in the United States (Pinto and Mayacoba). The Pinto beans used in the Fiesta brand come mainly from Colorado where the best Pinto beans are grown. The beans are grown there due to the cooler temperature where in turn, produces a better bean crop. The Mayacoba beans are also known as Canary and Peruvian beans, and they come mainly from the State of Sinaloa in Northwestern Mexico. They were named after a small village in Mexico where this new version of an old Inca bean was developed. These beans are grown close to the coast of the Sea of Cortez. People in Mexico, Peru and Ecuador have enjoyed Mayacoba beans for centuries. Now you can enjoy this buttery and tender taste found at your local Fiesta Mart Grocery Store.

Enjoy some "frijolitos" or refried beans like grandmother used to make.

Spinach is low in calories and high in vitamins, minerals and phytonutrients, making it one of the most nutritious vegetables around. Whether you eat it fresh in salads, steamed, or sautéed with garlic, spinach is packed with B vitamins, magnesium, potassium, folate, iron, lutein (a carotenoid), calcium and fiber. Find fresh spinach in your local Fiesta Mart produce department or stock up on frozen so you always have it on hand. If you're sautéing, use heart healthy olive oil, but be careful not to let the heat get too high - olive oil has a low smoke point.
