Peach Ice Cream

Ingredients
4½ gallons, 6 quarts milk
2 quarts heavy cream
1½ cups peach liqueur
6 pounds granulated sugar
1½ quarts sugared egg yolks
12 cups peach puree
12 cups peaches, diced

Directions
Combine milk, cream, peach liquor and ¾ of the sugar. Bring to a simmer.  In a large bowl, wisk together the egg yolks and remaining sugar. Temper and strain. Mix together the peach puree. Refrigerate overnight.  Process liquid through ice cream machine. Fold in diced peaches upon extraction.
