Nopales Salad

Timing:

Ingredients
4 medium raw young nopales “paddles”
1 roma tomato, cut into strips
¼ red onion, thinly sliced
8 sprigs fresh cilantro
2½ tablespoons extra virgin olive oil
1 teaspoon apple cider vinegar
½ teaspoon dried oregano
Salt & fresh ground black pepper to taste

Directions
Grill nopales and slice into strips, approx. 1½ x ¼-inch.  Place in bowl with roma tomatoes, red onions and cilantro.  In separate bowl, mix together oil, vinegar, oregano and pepper.  Dress nopales and season to taste.
